Personally, I always prefer the online chat option. Depending on your situation, you can choose any of the options, to best suit you. When you press the chat option, you can choose from a list of reasons that best reflect your query. Recovering a PSN account without email is not an option to choose from so you will have to scroll down to the contact us option on this menu.
You will then need to fill out a contact form, and it does ask for the email address associated with your PSN account. Because you do not have this, you can just fill in this box with any other email address that you may have. Your query will then be taken to a queue where you will be in line to speak to a representative at PlayStation support. They will be able to help you recover your PSN account.
If you have your PSN account email address but you cannot remember your password, then you can recover your account without it. This is simpler than recovering your PSN account without your email address. You will then be sent a link to your email address where you can reset your password. This email will be sent to you within 24 hours of your request. If you have done this, and the email has not been delivered after 24 hours has passed, then you can follow this link which will bring you to the playstation.
After receiving your email, you can then create a new password which can be used on the sign-in section on your PlayStation device. Make sure you write this new password down somewhere so that you do not forget it. Once you have signed back into your PSN account on your gaming device, your data should be saved for future sign-in attempts. Sony does usually delete PSN accounts if they have been inactive for too long.
